Daniele Brenci is a chef, baker, and bread maker. He’s a US corporate chef and Ambassador for Moretti Forni pizza ovens. His Instagram account @_breadcrumb is one of the top bread-making social media accounts around. Daniele’s new book, Advanced Bread Baking at Home, is available everywhere books are sold. Daniele and I got to talk about his unique upbringing in Rome, his journey, the difference between poolish and biga. And we learn a little bit about bomboloni, an Italian donut dusted with sugar.
